Preheat oven to 400°
Slice the zucchini lengthwise and with a knife you can cut out, or use a small spoon and scoop out, the inside of the zucchinis leaving around 1/4th of an inch around the edge. A small melon baller works here as well. Set aside for later use. Cut away a thin layer of the under side of the zucchini so it sets flat and does not rock.
Place zucchini boats in a glass baking dish and brush the zucchini halves with olive oil. Lightly dust the oiled zucchini with Perfect Seasoning.

Bake for 20-25 minutes, or until the zucchinis are soft (cook time may be dependent on the size of your zucchinis).
While zucchinis are in the oven, add the ground beef and chopped onions in to a medium saucepan and cook over medium-high heat until beef is browned and onions are translucent and then add the extra zucchini you removed to form the boat, lemon juice, spices, tahini and water. Stir until well combined. Add a little bit of water if the mix is to thick.
IF USING THE RICE: Mix in half of the rice with the meat mixture before adding to the Zucchini boats.
IF USING RICED CAULIFLOWER: Place frozen riced cauliflower in skillet on med high heat. Season lightly with salt and pepper or Prefect Seasoning. Cook on med high for 3 minutes stirring once half way through. Riced cauliflower should show slight browning around edges. Mix with meat mixture before adding to the Zucchini boats.
Once the zucchinis are cooked, add the beef mixture to the hollowed insides, top with cheese and place back in the oven for around 5 minutes to heat throughout.
Toss together a nice Greek salad for a side and enjoy!
You can add this mixture to bell peppers cooking them like you would the zucchini, or pan seared yellow squash cubes with olive oil and Perfect Seasoning.
If you do not use the lamb then increase your ground beef to 1 lbs.
