INGREDIENTS:
 ¾ lb Ground Beef
 1 Taco seasoning
 ½ cup Water
 1 Low Carb Whole Wheat Pita
 2 tbsp Red Enchilada sauce
 ¼ cup Colby Jack and Sharp Cheddar mixed, shredded (or Mexican blend)
 2 tbsp Sliced Jalapenos

Preheat oven to 375°F.

Brown the ground beef, add in the taco seasoning and water. Cook until water has evaporated. remove from heat and set aside.

Cut pita in half lengthwise by slicing around the outside edges. Open the pocket up and place the two halves onto a wire rack or sheet pan.

Spread one tablespoon of red enchilada sauce onto each pita half. Top with meat, jalapenos and cheese.

Bake 5-7 minutes or until cheese has melted and pita is at desired crispness.
