In a deep but not to wide pot (or a fryer) add enough peanut oil to just cover the hush puppies (2-3 inches), bring to medium heat and test a small bit of the batter. Using two spoons or a #30 (2 1/4TBSP) sized disher, Scoop batter almost filling disher and drop into hot oil. Hush puppies should take about 3 minutes each side and come out golden brown. Adjust heat as needed. Remove hush puppies with slotted spoon or spider strainer and turn on to a paper towel on a cooling rack.
