INGREDIENTS:
 1 cup Self Rising Corn Meal
 1 cup Yellow Corn Meal
 1 cup Almond Flour
 1 tsp Kosher Salt
 1 tbsp Baking Powder
 1 tbsp Swerve Sweater
 3 Eggs, beaten
 ½ cup Milk
 1 17oz Can Cream Corn
 1 ½ cups Shredded Cheddar Cheese
 ½ cup Yellow Onion, diced
 ½ cup Green Onion, chopped fine
 ½ cup Diced Jalapenos, more if you like more of a kick (optional)
 Peanut Oil for Frying

You can mix the dry ingredients a day ahead of time and keep in a zip lock bag in the fridge if you want.
In a large bowl combine self rising corn meal, flour, yellow cornmeal, salt, baking powder and sugar. Set aside.

In a medium bowl beat the eggs and mix in the milk. Combine the egg mix and the dry mix along with the cream corn, diced onion, green onions, cheddar cheese and jalapenos (if desired) Stir well until all is combined. Allow to set for 10 minutes.

In a deep but not to wide pot (or a fryer) add enough peanut oil to just cover the hush puppies (2-3 inches), bring to medium heat and test a small bit of the batter. Using two spoons or a #30 (2 1/4TBSP) sized disher, Scoop batter almost filling disher and drop into hot oil. Hush puppies should take about 3 minutes each side and come out golden brown. Adjust heat as needed. Remove hush puppies with slotted spoon or spider strainer and turn on to a paper towel on a cooling rack.
