Pour olive oil into heavy six quart pot. Add meat and cook over high heat, stirring constantly until meat is gray, never brown the meat. Add the quart of water and other ingredients, except for the flour and cornmeal. Stir to combine. Simmer cover for 2 hours.
Mix flour and cornmeal in 1 cup water until very smooth then add to mixture and cook for another 30 minutes. Stir often as you may have to add more water for desired consistency.
