INGREDIENTS:
Chicken:
 2 Boneless Skinless Chicken Breast
 ½ tsp Curry Powder
Sauce:
 ½ cup Coconut Oil
 1 Onion
 3 Garlic, minced
 3 Roma Tomatoes, diced
 1 Red Bell Pepper, diced
 14.50 oz Can of Coconut Milk
 ½ cup Swerve Brown Sugar
 2 tbsp Curry Powder

Dice chicken in to 1 inch cubes. In a medium bowl add chicken, seasoning and cumin and toss to coat. Set aside.

Heat the Coconut Oil over medium high heat and add the onions and bell peppers. Saute until onions are just about translucent.

Add the seasoned chicken and the curry powder in with the onions and peppers and continue to cook until chicken is browned.

Add the tomatoes, tomato sauce and the coconut milk and stir well. Let simmer for 20 minutes over medium heat.

Add the brown sugar and stir well. Let cook for an additional 5 minutes and then serve over rice.
