Sheet Pan Salmon

Yields4 Servings

 ¼ cup Butter, divided
 3 tsp Garlic, minced
 2 tbsp Parsley, chopped
 1 lb Cauliflower Florets
 Salt and Pepper
 1 ½ lbs Salmon Filet, cut into 4 equal portions (or not 😉 )
 1 tsp Lemon zest
 Lemon wedges for serving

Preheat oven to 400
Place 2 TBSP butter on a baking sheet. Place sheet in oven as it preheats

Melt the remaining butter in a small bowl and whisk in the garlic, parsley and lemon zest.

Remove pan from oven when butter is melted. Add cauliflower and sprinkle with salt and pepper. Mix to coat well with butter.
Bake 10 minutes.

Remove pan from oven and make room for the salmon. Skin side down, sprinkle with salt and pepper and drizzle with the garlic butter mix.

Bake for another 10-12 minutes, until the salmon is opaque and flakes easily with a fork. Thickness will vary the cooking time.
Serve with lemon wedge
