Grilled Lime Chicken with Peach Salsa

The Chicken:
 8 oz Boneless Skinless Chicken Breasts
 1 tsp Garlic Powder
 1 tsp Chili Powder
 2 tbsp Olive Oil, divided in half
 2 tbsp Fresh Lime Juice and Zest
 ¼ tsp Salt
 ¼ tsp Pepper
The Peach Salsa:
 2 Ripe Avocados, diced
 2 cups Cherry Tomatoes, chopped
 2 Large Fresh Peaches, seeded and diced
 3 Scallions, green parts only, sliced
 1 Handful of Cilantro Leaves, chopped
 1 Small Jalapeno, diced (remove seeds and wash well for milder heat.)
 1 tsp Minced Garlic
 Juice and Zest of 1 Large Lime

Place chicken in a large ziploc bag, or sealable fridge container with garlic powder, chili powder, 1 Tbsp oil, fresh lime juice, sea salt and pepper. Seal the bag, or lid and gently toss or shake to combine and coat well. Marinate your chicken, in the refrigerator, for at least 30 minutes, or if time allows, overnight.

In a large bowl, gently combine all peach salsa ingredients, and season with sea salt and pepper to taste. Keep refrigerated until ready to serve (best eaten within a few hours of preparing)

Heat an outdoor grill or a stovetop grill pan over medium high heat. Rub or brush your grill with remaining oil. Grill the marinated chicken for 4-5 minutes per side, or until internal temperature reaches 165.

Serve with peach salsa and enjoy!
