Loaded Cauliflower

I love cauliflower! That being said I hear a lot of people saying they are a GREAT substitute for potatoes.
“They taste just like mashed potatoes! You’ll never know the difference.”

Folks I’m sorry but there is no substitute for a starchy spoonful of buttery/cheesy mashed potatoes. There just is not. The same with riced cauliflower. NOT RICE! Rice and potatoes are super good and super tasty and if you are a diabetic, super off the every day menu. They just are. I’m ok with them every now and then but if you want to keep blood sugar low and end your dependency on insulin ya gotta make a few changes.
This is not a loaded mashed potato HOWEVER, it is SUPER FREAKING delicious! And super good for you at the same time!
